Pearl’s Chocolate Macaroon Cake—Teamwork and Surprises

Rich Chocolate Macaroon Cake

Teamwork—Bringing Our Talents to the Table

After a couple of weeks of baking cupcakes for my weekly blog, it was time to go back to cake—this time, a bundt cake. Admittedly, I am least familiar with bundts. I enjoy eating them, but I rarely make them.

Pearl’s Chocolate Macaroon Cake seemed like a fitting choice to make for this weekend. Our friends hosted a Big 10 women’s basketball tournament watch party. Our group of friends each brought something to the table—figuratively and literally, as always. The host made an incredible smoked pork butt—something I can’t do.  Another friend brought a wonderful home-baked sourdough. Another thing that’s not in my wheelhouse. My contribution was obviously a cake.

We were all excited to watch our favorite team work together. It’s gratifying to watch them use each other’s talents with the end goal of a win. Teamwork makes the dream work, which is definitely evident in this team.

The Right Mix

But how does this relate to the cake?

Macaroons are a sweet collision of chocolate and coconut—individual components that come together to add texture and distinct flavor. This cake felt like a parallel to team energy, and even to our group of friends. The right mix of talents and contributions complement and support one another, resulting in a winning combination—a team victory, a fun and satisfying potluck, or a chocolate coconut cake.

I also felt a pleasing irony in sharing a dessert from a different era—named, in fact, after someone’s grandmother, Pearl—for a modern game that wouldn’t even have been conceived of in the 1890s, when this style of cake first rose in popularity.

Women’s basketball has risen monumentally in recent years, thanks to stars who brought energy, physicality, and viewership to the sport. Even after these women have graduated and moved on, the momentum, excitement, attendance, and investment have sustained. So, too, have these vintage recipes.

It’s Worth Refining the Steps

Vintage Cakes author, Julie Richardson, notes in the recipe description that this cake requires many dishes. There are several steps involved in creating this classic dessert, including separating the eggs, making a meringue, preparing a cocoa-coffee-sour cream mixture, folding the meringue with coconut, and blending the base batter.

One of the things I’ve enjoyed about these recipes is slowing down and taking the time to really follow the techniques for each step. Anyone can throw together a box cake mix, but baking from scratch is an art. Similar to sports, specific techniques lead to desired outcomes. Each one needs to be learned and practiced.

A Sweet Surprise

This cake has a few star ingredients—coffee, sour cream, Dutch cocoa, plus egg whites and sugar whipped into a fluffy meringue. But the real star is the coconut. The coconut and part of the meringue combined for a surprise element—the chewy coconut ring in the middle that makes this a macaroon cake.

In my opinion, it’s always fun to find a surprise when you slice into a cake. Unexpected delights make life interesting and fun.

The Sweet Surprise in the Middle

The Right Cake for the Occasion

Draped in a dark, creamy chocolate ganache and interrupted by a coconut center, this cake was a unique treat. I was excited to slice through it to reveal the surprise.

With a pleasant cocoa flavor, a fine crumb, and a white center, the cake almost reminded me of Little Debbie cake rolls. Someone else noted that it was reminiscent of German chocolate cake. That made sense.

As noted at the end of the recipe, it’s a “great keeper”. It can sit at room temperature for up to five days, as if it would last that long. It turned out that the longevity was useful for the occasion, though.

Our watch party resulted in a three-day event, as we watched our ladies earn their trip to the championship game. This is a team that wasn’t predicted at the beginning of the season to culminate in a championship-level season—another great surprise.

Things That Last: The Transcend Moment

As moments come and go, it’s comforting to notice the things that last—friendships, team camaraderie, and a timeless dessert recipe.

Life is richer with the things you can rely on, things you can enjoy and celebrate, and little surprises along the way.
